Frozen Banana Ice Cream

Frozen banana ice cream was one of my favorite treats when I first changed my diet. Seriously, who knew that bananas, peeled, frozen, then thrown in the food processor is like ICE CREAM? True story! One ingredient, and amazingly delicious. My mom (before she tried it) thought we needed to add some honey... NOPE, it is so sweet and creamy all on its own!



First, peel and freeze your bananas. I freeze them whole, but for banana ice cream it really works best if they are chopped up, so do that ahead if you prefer.


Then, add them to your food processor or blender. I used our Vitamix, and in order for it to blend right, I would recommend at least two and a half bananas.


First it will get a little crumbly. Stop the blender/processor and scrape down, if necessary. Then keep blending until it gets really smooth.


Now, you can stop right here.... or you can take it a step further with some "magic shell" topping. Simply mix your cacao powder, coconut oil , and maple syrup until smooth. It helps if your coconut oil is a little on the melty side. It was a warm day here, so perfect consistency.


Scoop frozen banana ice cream into pretty dish.


Top with chocolate shell and watch it harden up.


Add any other toppings you want! I just added some sliced almonds :-)


You will want to make this frozen banana ice cream EVERY NIGHT for dessert now... you're welcome. ;-) Will you get sick of it? No way! This is such a "plain jane" version (although I love it), you can mix it up by blending in other frozen fruit, peanut butter, or dried fruit. The possibilities are endless!

Sweet and creamy frozen banana ice cream, made with only one ingredient! Covered with a delicious "magic shell" chocolate coating, this is a healthy dessert that seems decadent!


Ingredients


Ice Cream

  • 2-3 bananas (previously peeled and frozen)

Chocolate Shell Topping:

  • 1 tbsp. cocoa powder

  • 1 tbsp. coconut oil (softened)

  • 1-2 tsp maple syrup

Instructions

  1. Ice Cream: Chop bananas if whole. Place in food processor or high speed blender. Process until smooth and creamy, stopping to scrape down sides if necessary.

  2. Chocolate Shell Topping: If coconut oil is solid, heat slightly to melt. Mix with cocoa powder and maple syrup.

  3. Pour chocolate over ice cream and enjoy!

Notes

If you like a "harder" ice cream, put blended banana mixture in the freezer for about 10 minutes before eating. :-) I can never wait that long though!
